Slow Cooked Lamb Shoulder

Lamb is delicious and healthy. I just try not to think of cute little lambs frolicking in a meadow when I go to eat it. Much of the lamb sold in stores, even at Walmart, is grass-fed. Lamb from New Zealand is almost exclusively pastured, so it's a good choice no matter where you shop.

I had a large lamb shoulder in the freezer for a while. I put it in the crock pot along with 2 carrots, an onion, a leek, and 6 garlic cloves. Put all the veggies at the bottom and nestle the lamb on top. Sprinkle kosher salt and cracked black pepper on top of everything. Add about a cup of water, and cook it on low for 8 hours. It should be very tender when finished cooking.
