Homemade Microwave Potato Chips

This recipe comes straight from my angel mother. She and I shared a love for potato chips. She would make them in the microwave sometimes and this is how she did it.

Ingredients

  • 1 or 2 potatoes. I used the red potatoes I caught at the St. Patty's Day parade last weekend.
  • Salt
  • Parchment paper
  • A microwave safe plate
  • Vegetable peeler or mandoline

Method

Peel potato slices using a vegetable peeler or a mandolin on the thinnest setting. Lay a sheet of parchment paper on a plate and spray it with olive oil. Place one layer of potatos on the plate and spray them with a tiny bit of olive oil and sprinkle with salt. Microwave on high for about 1 minute and 30 seconds. Watch them the whole time. You may need to add 30 seconds at a time. When they start to turn a little brown they are done. Be careful not to burn them! See the pictures below for a before and after shot. Yum!
