Burger and Fries

Tonight we had bacon jalapeno burgers and sweet potato fries for dinner and it was everything I hoped it would be. :-) Deeelish!

Jalapeno Bacon Burgers

This recipe made about 16 burgers. We cooked up 10 of them and froze 6 of them between sheets of wax paper.

Ingredients

1/3 cup diced onion
1/3 cup diced bell pepper
2 cloves garlic, minced
6 strips of bacon, cooked, and crumbled
2-3 jalapenos, seeded and diced, unless you like it spicy then leave some of the seeds in
2 eggs
2 pounds of ground grass-fed beef
1 pound of ground grass-fed pork
sea salt/pepper

Method

Preheat the grill - medium
Throw all the ingredients into a mixing bowl and combine gently. Don't over mix. I use my hands.
Form into patties and put an indent in the middle. I think this helps them from curling up on the edges?
Grill to your liking.

Serve with lettuce for wrapping, extra bacon, avocado, tomato and onion!

Sweet Potato Fries

Use a spiral slicer on a large noodle setting to make large curly fries, or cut up potatoes in uniform, thin, sticks.
Heat coconut oil in a pan with high sides.

Place a small piece of sweet potato in the oil and if it immediately starts bubbling and sizzling the oil is ready.
In batches, fry up the sweet potatoes in the hot oil. Don't overcrowd the pan. It should continuously bubble. Flip them around every couple of minutes. They will start to get slightly brown and hard. They will crisp up even more once you take them out of the oil.

Place them on paper towels to drain, immediately add sea salt and a squeeze of lemon. Chop up some fresh herbs and spinkle them on the fries. This takes it to a whole different level! We used basil, oregano, rosemary and parsley. YUM!

I also made a sauce of mayo, ketchup and mustard for the burgers and fries.

We drank a mocktail made of kombucha from whole foods, green tea, water, and rosemary.
