Baked Apples
This tastes like Fall to me and reminds me of baked apple pie without the unhealthy pie crust!
Ingredients
I did not measure anything out for the filling so below are my estimates of what was used. You want to end up with a large heaping spoonful or two of filling for each apple.
- Apples - I used 3 Granny Smiths
- About 1-2 tablespoons of almond flour or coconut flour.
- About 1 teaspoon each of cinnamon and nutmeg
- 1-2 tablespoons honey
- A dash or two of cocoa powder
- 2 teaspoons vanilla extract
Method
Take the core out of the top of the apple and leave the bottom in tact. You're going to stuff the apples with your mixture so it's okay if this gets messy and you make a big hole in the middle of the apple like I did.
Mix together almond or coconut flour, cinnamon, nutmeg, honey, vanilla, cocoa powder and stuff the apples with the mixture. Squeeze a little lemon over the top to keep the exposed apple from turning brown. Put a pat of butter on top and bake at 350 for 20-30 minutes until tender.
